Why is cooking with extra virgin olive oil better?

Phenols or the antioxidants found in fresh extra virgin olive oil protects the oil from the formation of aldehydes, which can be dangerous to our cells.
Aldehydes will begin to form in any type of cooking oil as soon as it begins to oxidize due to heating and increase in mass when heated for a long time or at very high temperatures. Phenols, which are unique to fresh, well-prepared extra virgin olive oil, fight against thermal oxidation and with that prevent the formation of toxic aldehydes.
